


London rocked to the sound of Suffolk band The Broadside Boys as The Dingley Dell roadshow stuck our trotters and snouts firmly down in the mean streets of the city. Tonights Flying Visit featured the usual slicing and dicing butchery demo by Master Butcher Jim Craig and the farm tour video of our stars the hogs at Dingley Dell on screens. There then followed what could be described as the biggest, baddest apocalyptic BBQ feast ever seen paired up with the brews of Meantime and Aspall’s.
Whole Hog Board- potted brawn, crispy pigs ears, black pudding trotter fritters and mini hot dogs ,with gooseberry chutney and purple basil jam all cooked by Stephen Bushnell and Chris Knights of Youngs kickstarted this Orwellian feast .
Apple smoked pig cheeks with mead jelly and pea puree from the amazing Paul Sowden of The Elk Bar in Fulham.
Next up World championship St Louis pork ribs cherry smoked with a BBQ and black treacle glaze from 3 times British BBQ champion and 5 times World finalist Andy Annat.
Mark Poynton from Alimentum took a whole spitted Hog, brined with cyder and apple juice then rubbed, marinated mopped and sauced to produce possibly the finest spitted pig London has ever seen.
Ben Goldsmith turned it on big time next with 18 hr cooked pulled pork shoulder cooked with herbs and hickory infused.
The finale for those still hungry ( unbelievably most people ! ) was a pork inspired dessert from Stephen and Chris of Youngs.
