Flying Visit 3 was a great evening hosted by Mark Poynton at Alimentum in Cambridge, the evening started with a bacon infused bourbon cocktail by Joe Tivey from 12 A members club the tone was set. Canapes followed from ” A Passion to Inspire” students James Drury and Rachel Speake from Colchester Institute. Tom Roberts from Direct Meats then butchered a Dingley Dell side in around 15 mins explaining the various cuts as he went, after a great talk on the evenings paired wines we played a short farm tour on the big screens then it was time to let the feast begin.

First up was Eric Snaith from Titchwell Manor in Norfolk with crispy pigs head with a garden vegetable salad and almond.

Next Russell Bateman from Collettes at The Grove with Pork belly with carrots, liquorice, sweet cicely and lemon verbena.

Ham, Egg and Cheeks by Ross Pike and Madalene Bonvini-Hamel from The British Larder.

Mark Poynton our host then presented us with hay smoked pork loin, turnip apple and jack by the hedge.

And finally for dessert peanut,strawberry and crispy pork shoulder by Michelle Gillott.

Another amazing pork tasting menu was enjoyed by all, a big thanks to all the chefs involved for creating another Flying Visit.
