We offer a range of salamis and whole muscles from our new charcuterie factory. We select only our Pure Red Durocs for this programme and feed them specialised diets for a further three months to ensure a high level of both fat and marbling.

The Cured Collection

Our Cured Collection is produced using a traditional Wiltshire cure, developed by the Harris family of Calne in the 1800s. It is one of the oldest forms of immersion curing in use today and requires a delicate blend of time, temperature and expertise.
